Vegan Cinnamon Apple Cookie Crumble Recipe

Serves 1

crumble topping:
1x Cinnamon Sultana Teff Bite
1x tbsp rolled oats
1x tbsp Oat Avenue original granola butter

spiced apples:
1x Pink Lady apple, chopped
1/4 tsp ground cinnamon
1/8 tsp ground nutmeg
1/8 tsp ground cloves
pinch of ground cardamom
drizzle of maple syrup (optional)

Method: Preheat oven/airfryer to 180C. Toss the chopped apple in the spices & maple (if using), then transfer to a ovenproof ramekin/bowl. Bake until the apples are slightly soft and juices release - this took around 5-7 mins in an airfryer, but might take around 10 in the oven. In the meantime, make the topping by breaking the cookie into chunks (I like to vary between small and large pieces for texture contrast). Mix with the oats and granola butter, and crumble it with your fingers to combine and form clusters. Top the apples with the cookie crumble, then continue baking until the oat clusters look slightly golden-brown - this took around 5 mins in my airfryer.
